Spaghetti Squash Surprise

Last night in a rare time that my husband was home, we decided to cook one of our spaghetti squash for dinner. I was busy moving some boxes up to my studio so when I heard him make some noise as I shut the door I decided to let it be. Turns out he was all excited about this—-a seed had sprouted inside of the squash! We gardeners are easily entertained!

Spaghetti squash is great to have on hand and lasts a long time. We harvested these back in late May/early June. Paired with some faux ground beef (being as I am vegetarian and Chris tries to eat veggie while at home) and our homemade spaghetti sauce, this makes a great meal. It is amazing how quickly the squash fills us up too—no endless bowls for us like when eating regular pasta.

    That is all sorts of awesome! I get excited when a seed falls into the pool and sprouts on the bottom. One time we had a plant growing out of the bottom filter- it wasn’t a HUGE plant, but one day a tiny little sprout popped out and the next few days it grew and grew. The pool cleaner nabbed it, though. It entertained me. It’d be cool to have some sort of garden at the bottom of the pool to swim over…
