When we decided to change out the beds for the summer I knew I wanted beans. Chris had a few varieties he was growing and so I wanted to have my own. We were at Lowe’s one afternoon to pick something up and of course we detoured to the seed racks. Most of the seeds were picked over but I found one called asparagus beans, also known as yard long beans.
Let me tell you, these are quite possibly my new favorite thing to grow! Talk about bang for the buck and space! I harvested what I thought was a handful one day, the first real harvest for them, and once I cut them up I really had enough for several meals! The plants themselves kept us guessing, seeming to take awhile to bloom, but one day I looked over and beans had formed. Nature is full of happy surprises!
What bean varieties have you grown and recommend? How do you preserve your bean harvest? Right now I am blanching and then freezing them.
